Guacamole

I. Love. Guacamole. I could make a meal out of it and be perfectly happy... Is that weird?



Guacamole
Makes 2 cups of guacamole
Total time: 15 minutes

Ingredients
2 avocados
1 lime
1 roma tomato
1/4 cup chopped onion
1/4 cup cilantro
1/2 tsp garlic powder
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp cayenne pepper


1. Chop roma tomato, onion, and cilantro.

2. Insert the knife in the avocado until it reaches the pit. Turn the avocado so the knife cuts all the way around the pit. Remove the knife and twist the two halves of the avocado apart. Spoon the pit out and discard. Spoon the green part of the avocado out of the skin. Chop in big chunks.

3. Place the chopped avocado in a bowl and mash up with a fork.

4. Repeat step 2. with the second avocado but DON'T MASH!

5. Mix both avocados, spices, onion, tomato, cilantro, and the juice of one lime. Serve with chips or on top of your favorite Mexican dish. Enjoy!

Chop roma tomato, onion, and cilantro. Roll the lime on the counter to release the juices and slice.

Insert the knife in the avocado until it reaches the pit and stop.

Turn the avocado so the knife cuts all the way around the pit.

Remove the knife and twist! You'll have two halves with a pit in one of them.

Spoon the pit out and discard. Spoon the green part of the avocado out of the skin. Chop the avocado up in big chunks.

Mash up one avocado with a fork. This one will be creamy but we will leave the other avocado in big chunks!

Repeat the above steps for the second avocado EXCEPT for the mashing with a fork. I like guacamole with texture.

The spices. We've got cumin, garlic powder, cayenne pepper, salt, and black pepper. 

Mix avocados, spices, onion, tomato, cilantro, and the juice of one lime! I suppose you could chop the ingredients up smaller than I did but I like chunky guac!

Of course it's good as a dip with chips but I also love putting it on tacos and burritos, and oh on top of nachos would be awesome I'm sure. You have to eat it quickly or else the avocado turns brown, but if you press cling wrap onto the top so no air can get to it, it will be good in the fridge for a about 24 hours. You probably wont need to do this though because it is NOT hard to finish this in one sitting... alone. I may or may not have eaten guacamole and chips for dinner on occasion...
